Brendan Fong and John Javier will be cooking brunch together at Pachamama East - 73 Great Eastern Street, EC2A 3HR - for one day only on the 11th August, from 11am until 4pm. All dishes will be available a la carte.

The 4th instalment of The Brunch Club pop ups will see Brendan Fong, taking over the kitchen for a one off brunch-time extravaganza with John Javier.

Australian born, raised in a Chinese-Fijian household; Brendan was surrounded by the culture and flavours of home cooking. Embracing his heritage has played a large part in influencing his career and passion.

Previously Head Chef for 3 years at Sydney’s two hat Cantonese restaurant ‘Mr. Wong’, he led a team of 45 chefs, serving 700-800 people per day. Consistency was key for every dish sent out from the kitchen. By utilising his experiences and working together with local suppliers, Brendan’s take on Cantonese and regional Chinese food will be an unexpected treat to London diners.

Having worked in numerous kitchens, each chef imparted knowledge to Brendan such as the late Jeremy Strode of 'Bristrode CBD', who taught Brendan techniques handed down to him by Pierre Koffmann. It was there he also learnt the importance of simplicity - less is more.

By utilising his experiences, Brendan's take on Cantonese and regional Chinese food will be an unexpected treat for London diners.
